 Life is getting better again

Barbara has been through Hell and is not back completely...but at least she is at home again. 10 days solid by her bedside in ICU...followed by 2 weeks at home with her. I am able to get away for a few hours at a time now. We got her out of the house yesterday for the first time to see our granddaughter perform in a dance recital. That was a good sign.

Now another good sign is a roast that we prepared this morning as it cooks for 8-9 hours making me want to lick the aroma out of the air.

I am very fussy about my choice of beef. Free range , no steroids, Angus, and it MUST be striated with thin veins of fat. Zoom in on this just starting to cook fIlet-o-cow.

Its cooking in apple juice, carrots and 5 pounds of red potatoes. This makes the best roast I have ever had, and the potatoes are freakin out of this world!

Glad to get my co/chef back!

Meant to ask ... do you cover the potatoes in apple juice or just put a bit in the bottom of the roaster ?? .... I want to try it some day.

Arnie- My part of this project is selecting the beef....and peeling the carrots and potatoes. Barbara puts in the carrots....the potatoes except for filling in around the beef.. then the beef....then fill in the corners with extra potatoes.....then she pours about a quart of apple juice in. Cooks in our 6 quart crock pot for 8-9 hours. It is simply delicious. Will post pictures later.
